RECIPE:Steak Frites with Truffle Parmesan Frites

Russet potatoes (sliced into fries)2 lbs.
Olive oil (divided)4 tablespoons
Sea saltas needed
Black pepper, freshly groundas needed
Parmesan cheese, gratedas needed
Truffle oilas needed
Fresh parsleyas needed
Heat an oven to 450 degrees and line a baking sheet with parchment paper.
Toss the fries with 2 tablespoons olive oil. Spread the fries onto the baking sheet and bake for 20 minutes or until crispy.
Once the frites have finished cooking, immediately season with salt and sprinkle with parmesan cheese.
Meanwhile season the steaks with sea salt and pepper. Let the steaks rest on the counter for 30 minutes.
Heat the remaining 2 tablespoons olive oil in a cast iron skillet over high heat. Place the steaks into the hot pan and cook un-bothered for 2 minutes. Rotate the steaks and cook for another 2 minutes. Continue to rotate the steaks until all sides have been seared and you have reached your desired degree of doneness. Remove the steaks from the pan, place them on a plate with the butter on top and let sit unbothered for 5 minutes.
Slice the steaks.
Plate the steaks and spoon the drippings and melted butter from the plate on top.
Then add on the frites and drizzle with truffle oil.
Finish off the frites by sprinkling some fresh parsley over the top.
